Pulled Pork Sandwich with Sweet Slaw

Serves: 8 sandwiches

 

You’ll Need:

For Pulled Pork:

  • 1 pack Wonder® Hawaiian Buns

  • 3-1/2 pounds boneless pork shoulder

  • 1/2 cup brown sugar, packed

  • 1 medium red onion, diced

  • 20-ounce canned pineapple rings in juice (use juice for marinade and rings for slaw)

  • 16 ounces teriyaki sauce or marinade

For Sweet Slaw:

  • 2 cups shredded purple cabbage

  • 1/2 cup diced pineapple

  • 1/2 cup diced mango

  • 1/2 red bell pepper, finely diced

  • 3 tablespoons chopped cilantro

For Dressing:

  • 3 tablespoons mayo

  • 1-1/2 tablespoons fresh orange juice

  • 1 tablespoon sugar

  • 1 tablespoon cider vinegar

  • 1 teaspoon dijon mustard

  • 1 teaspoon celery seed

  • 1/4 teaspoon kosher salt

  • 1/8 teaspoon black pepper

Follow these steps:

For Pulled Pork:

  1. Create a marinade by combining the brown sugar, diced red onion, pineapple juice, and teriyaki sauce in a large bowl.

  2. Place the pork shoulder in a slow cooker, and pour the marinade over the pork.

  3. Cook on low heat with a lid for 7 to 8 hours, or until the pork is done.

  4. Carefully place the pork in a dish and use two forks to shred the pork.

  5. Add half the marinade from the slow cooker to the shredded pork and stir until combined.

  6. Top off your delicious sandwiches with the Sweet Slaw and enjoy!

For Slaw and Dressing:

  1. Place all slaw ingredients in a bowl and toss gently. 

  2. In a separate bowl, whisk dressing ingredients together until thoroughly combined. 

  3. Pour the dressing on the slaw and toss gently until everything is evenly coated. 

  4. Refrigerate slaw for 20 minutes.

  5. Remove from the fridge and add your slaw on top of your pulled pork!
