Spinach Artichoke Crostini

Makes 40 appetizer servings

1 1/2 cups frozen chopped spinach

1 can (13 3/4 ounces) artichoke hearts, drained and chopped

1/4 cup mayonnaise or light mayonnaise

1/4 cup sour cream or light sour cream

1/2 cup shredded Parmesan cheese

3/4 cup shredded Mozzarella cheese

1/4 teaspoon garlic powder

2 to 3 drops hot pepper sauce

10 slices Wonder® bread, toasted

Preheat oven to 400 F. Line a baking sheet with aluminum foil.

Place spinach in a glass or microwave safe mixing bowl. Add 1 tablespoon water. Cover and microwave on High (100%) 3 minutes. Drain well and squeeze dry. Blend in remaining ingredients, except Wonder bread. Cover. Microwave on High 2 to 3 minutes, or until hot and melted, stirring every minute.

Cut each slice of toasted bread in half diagonally, then in half diagonally again, making 4 pieces per slice. Arrange slices in a single layer on foil-lined baking sheet. Spoon about 1 tablespoon hot dip onto each bread quarter, spreading until even and just near the edges.

Bake 5 to 6 minutes or until golden and hot.

Tip: If desired, dip can be made ahead. Cover and refrigerate. When ready to serve, microwave 3 to 4 minutes or until hot and melted. Proceed as recipe directs.

Tip: For ease, purchase frozen chopped spinach in a bag so you can easily measure out the needed amount. Seal and return the bag to the freezer for use another time.
