Serves 2
3 Italian hot sausage links
1 tablespoon olive oil
1 red bell pepper, cut into strips
1 red onion, chopped
1 (4-ounce) can sliced mushrooms, drained
4 slices Wonder® bread
Put the sausages in a saucepan and cover with water. Boil for 5 minutes and then drain.
Heat the oil in a large skillet. Add the sausages and cook, turning to brown evenly, for 10 minutes, or until they are no longer pink inside. Remove the sausages and keep warm. Add the red pepper and onion, and cook, stirring, until the vegetables are tender. Stir in the mushrooms and cook for 3 to 4 minutes longer.
Slice the sausage links in half lengthwise. Place the sausages and vegetables on 2 slices of bread; top each with a second slice of bread.
Tip: Wrap the sandwiches in aluminum foil. When ready to serve, use the foil as a "plate" for the sandwich.
"Growing up in the early 1960s, I carried my lunch to school every day - a meal made by my Italian mom with culinary influence from my Syrian dad. A favorite treat combined both of their cultures; sausage and pepper sandwiched in pita bread. Schoolmates would often ask: "What kind of sandwich is that?" or "We never saw bread like that," and I'd go home crying. Wonder bread (and my mom) came to the rescue."
